Ingredients for 15-20 white chocolate and matcha cookies:
・170 g melted butter
・150 g brown sugar
・100 g granulated sugar
・1 large egg + 1 egg yolk
・1 tsp pure vanilla extract
・3 tsp matcha powder + 2 tbsp water
・280 g all-purpose flour
・2 tsp corn starch
・1 tsp baking soda
・1 pinch salt
・200 g white chocolate (baking chocolate)
1, Cut the bar of white chocolate in little cubes and set it aside.
2, Melt the butter and combine the granulated sugar, brown sugar and the vanilla extract.
3, Mix it with a whisk.
4, Add 1 large egg and 1 egg yolk and mix with a whisk.
5, Put 3 tsp matcha powder in a separate bowl and add 2 tbsp boiling water to make a paste.
6, Add the matcha paste to the butter and sugar mixture.
7, Put the flour in a separate bowl, add 2 tsp corn starch, 1 tsp baking soda and a pinch of salt to the flour and mix the dry ingredients.
8, Add the dry ingredients to the liquid preparation.
9, Mix it until well combined.
10, Add the white chocolate chips and mix.
11, Cover the dough with plastic wrap and let it sit in the fridge for 1,5 hour - 2 hours or put it in the freezer for 30 minutes.
12, Preheat the oven to 180°C/350°F
13, Scoop a little bit of the dough out of the bowl with a table spoon and shape it with your hands into a ball.
14, Lay the balls on a tray and let them sit in the freezer for 15 minutes.
15, Put 8-12 dough balls on a tray lined with parchment paper and bake them in the oven for 9-12 minutes.
16, Let them sit for 15 minutes in room temperature and enjoy！
